It's interesting that the Qurʾān uses the term "taḥrīf" to describe what the People of the Book did to scripture. It entails the meanings of "moving words from their rightful places", "twisting words", "falsifying words".

Atbash is literally the reversal of the standard Hebrew alphabet:

Here is one place in the Torah where this is openly done, it's in Exodus 20:21 (Masoretic Text).
