It's interesting that the Qurʾān uses the term "taḥrīf" to describe what the People of the Book did to scripture. It entails the meanings of "moving words from their rightful places", "twisting words", "falsifying words".

Atbash is literally the reversal of the standard Hebrew alphabet:

Here is one place in the Torah where this is openly done, it's in Exodus 20:21 (Masoretic Text).
"I will mention my name" to "YOU will mention my name".

Another kind of example is Job 1:5 & 11 where the word "bless" is used but the word "curse" is meant to be written. It was changed by the scribes to avoid the phrase "curse God" being in the text according to the editors of the NET Bible.
