Biryani which is a 'meat & rice' dish flavoured using Indian spices was consumed in Ancient India by name मांसोदान
One early mention of it is there in Panini's Ashtadhyayi (5th-6th century BCE).
What Mughals did was plagiarising this dish by a different name. Thread!
Pak Darpan explains about various kinds of Mānsodāna (Biryani like dish)
Kukkuța Mānsodana is what is today called Chicken Biryani
Pak Darpan also mentions covering the lid of vessel (Dum technique) for cooking this dish.
Different kinds of seasonings using Ghee are mentioned
So this Meat & Rice dish which was cooked in ghee using Dum technique is mentioned in Sanskrit text Pak Darpan.
It also mentions serving this dish with crispy garnishing like fried Pappad. Modern day Biryani is served similarly with fried onions/pappad
An early mention of this मांसोदान is there in Panini's Ashtadhyayi which points that this dish has been consumed by Indians since several centuries.
A Comparable dish to Mānsodāna or Biryani is mentioned in Bhojanakutuhala (written by Maratha Brahmin Raghunātha in 17th century) by name Harishā.
This dish is made using Meat, Rice, Brinjal, Ghee & spices.
17th century is same time when 1st mention of Biryani is recorded
Rice was not eaten in homeland of Mughals. They did not "bring" Biryani in India. 1st mention of Biryani comes only in 17th century CE.
Meat Rice dishes flavoured with spices were already prevalent in Ancient India before birth of Islam
What does this indicates?
This indicates that when Mughals came to India, they saw Indians cosuming meat rice dishes
They copied these dishes from Indians and referred them with Persian name
But the word Biryani is itself derived from Persian word Birinj which is turn derived from Sanskrit word व्रीहि
None of the ingredient used for cooking Biryani is outside from India
Concept of Meat Rice dish is Indigenous to India
Its Cooking technique already finds mention in Pak Darpan
What innovation did Mughals bring?
Zero
They just plagiarised the dish by coining a Persian name

We also had a vegetarian version of Biryani/Mānsodāna and that was known as Tāpahari (तापहरी)
Meat was replaced using Dal Chunks or Vadas prepared from Dal.
Today it is known by the name Tahri in North India
The ingredients of this dish were similar to Mānsodana (viz- Rice, Ghee, spices, veggies etc.) Except that the meat was replaced with Dal Chunks/Vadas.
Modern version even use potatoes and other vegetables
