Hydrolyzed means that the collagen has been broken down into smaller, lighter particles that are easier for the body to digest and use.

Hydrolyzed collagen peptides weigh 0.3-8.0 kDa and are made by decomposing gelatin, which weighs 100 kDa, via enzymes.
The low molecular weight of hydrolyzed collagen means that it is highly digestible and easily absorbed and distributed in the body.
The study authors conclude:
β€œSeveral experiments have shown that collagen peptides can be efficiently absorbed & distributed to the dermis… where they can stimulate the proliferation & motility of fibroblasts; induce an increase in the density & diameter of collagen fibers;

The key here is the use of hydrolyzed peptides. Due to its higher molecular weight, it is not clear that gelatin has the same effects.
