There really isn’t anything special specifically about coffee and it’s health benefits found in studies.
Most benefits are not associated with caffeine directly, and all of the other beneficial phytoconstituents can be found in numerous herbs and spices.
Coffee market is one of the largest corporations globally, hence why research is skewed towards it specifically.
Much less so for other herbs, if at all.
Most are just addicted to the effects, this creates adaptation to the brain to begin to associate its buzz with enjoying the bitter taste of coffee without additives.
The nuance in its toxicity is largely dependent on baseline stress levels and circadian rhythm, where if your baseline cortisol is high and dysregulated, it will exacerbate this cortisol response oftentimes significantly.
Cortisol in excess being toxic.
Not to mention any stimulant creating acute GABA/glutamate imbalance skewed in favor of higher glutamate.
