This chocolate maker is the most coveted by Michelin ⭐️ pastry chefs… and you probably haven’t heard of them

One summer, BITD, I was spending vacation time working for free in NYC at a 3* Michelin to learn under a pastry chef
That’s right, even though I was a savory cook I wanted to be proficient in bread, baking and pastry.
Getting to work with this chef was a dream because he was somewhat of a “god” in the pastry circle of food & his star was peaking
One thing that impressed me was the importance Chef stressed on quality of ingredients
Fresh fruit from Union Square market, ofc, but also chocolate
Until that time Valhrona was the standard in all the high end kitchens I had seen, plus a few other producers
But this chef was using a superb and surreal chocolate I had never heard of or tasted
It was a French choclatier... Michel Cluizel
Founded in the French town of Damville in Normandy in 1948 by Marc Cluize.
This is a bean-to-bar chocolate maker that started in a home kitchen and grew into the premier chocolate maker in the culinary world.
