There are two types of fats found in nature
Saturated Fats
Unsaturated Fats
The difference (without boring you too much about the chemistry) is that saturated fats are solid at room temperature
while unsaturated fats (seed oils) are liquid at room temperature

Unsaturated fats are very unstable molecules
& go rancid very easily
Most commonly used seed oils are extremely inflammatory because of this
Inflammation = your silent killer
That's something you want to avoid if you want to live a long & healthy life

Seed oils, better known as vegetable oils, appeared at the turn of the 20th century
Prior to that, animal fats were used in all of our cooking
Lard from pigs
Butter from Cows
Tallow from Beef
Suet from Lamb
Certain Asian cultures used coconut and palm oil

It gets worse
They wanted to make these oils more solid
& make them look just like butter
Their scientist used Hydrogenation, an industrial chemical process in order to make it happen

Soon after, the war against animal saturated fats began
In the 60s
Ancel Keys used research to convince the masses of the danger of saturated fat and heart disease
The American Heart Association came into being around this time as well

What most of you don't know is that Procter and Gamble
The same company that owned Crisco
was very closely related to the American Heart Association & even funded them
Conflict of interest much??
It took decades before people started catching on to the scam they were sold

As more research came out, seed oils seemed less and less like the health saviors they were thought to be
Side effects of seed oils were increases in:
Gallstones
Cancer
Stroke
Damaged liver
They are also very high in Omega 6, a polyunsaturated fatty acid (PUFA)

All of you have something called an Omega3 to Omega 6 ratio
Omega 3 is an anti-inflammatory form of PUFA
Omega 6 is pro-inflammatory and is found in most packaged foods
The average American consumes 20x more Omega 6 than Omega 3
That's a disaster for global health

So now, you might be wondering:
"If seed oils are everywhere, what should I do to protect myself?"
Answer is simple
Avoid them at all cost!
Most of your favorite restaurants use them to cook their food so that makes its very hard to completely avoid
but do your best

There are some seed oils that are exceptions
Any seed oil that is cold-pressed is less likely to go rancid
For example, Olive oil is a seed oil that is very healthy for you

***CORRECTION to thread***
Olive Oil is not a seed oil
Itβs technically a fruit oil but often gets lumped in with vegetable oils
Sorry for the confusion
