Garlic is one of the oldest known crops in Europe and Asia. Native to Central Asia, garlic is part of the culture of civilizations in Europe, Africa, and Asia.
Writings from ancient Egypt and India dating back 5000 years mention garlic.
The therapeutic effects of garlic are mainly due to the impressive activity of its bioactive compounds, such as organic sulfides, saponins, phenolic compounds, and polysaccharides.
There are more than twenty well-known polyphenolic compounds in garlic.
Garlic is considered a functional spice because of its diverse array of nutritional constituents, phytochemicals, and fiber.
It contains:
- high levels of potassium
- phosphorus zinc
- sulfur
- selenium
- calcium
- magnesium
