One of my favourite meals to cook and eat is steak, honey roasted carrots, and mash potato. It’s good for you but also warms the soul. In this thread, I’ll show you how to make it.
These are your ingredients. Butter, steak, potatoes, carrots, herbs (rosemary & thyme). Not pictured: salt, pepper, raw honey, whole milk.
Prep work. Salt your steak on both sides and refrigerate for two hours beforehand to dry brine it. Remove from fridge. Preheat oven to 220c. Peel potatoes. Wash carrots and trim the leafy ends.
In an oven dish, coat your carrots in a little olive oil, salt, pepper, and some of the herbs, and toss to combine. Put into the oven once up to temperature.
Then, put your potatoes in a saucepan, fill with cold water until they are just covered, add a little salt, and bring to the boil. I use baby potatoes because they cook faster even than large potatoes cut into chunks.
Remove your steak from the fridge and let it come up to room temperature. Refresh yourself with a little glass of pomegranate juice while you wait.
Once your carrots are starting to go wrinkly it means they are almost cooked. Remove from oven, add some honey (raw is preferable) and toss to coat. Reduce oven temperature to 80c and put the carrots back in.
Potatoes should also be soft by now. Strain water, lower heat to low and start mashing. Add in lots of salted butter, as well as incremental amounts of whole milk, while mashing until they come to a nice consistency. I like mash potato.
Put your pan (cast iron if possible) on the heat until it starts to smoke. Pat your steak dry, then add to the pan. Cook for a couple of minutes until one side is browned, then flip and add butter and herbs. I melt these in the microwave quickly and pour some over the top.
Once cooked, remove your steak and let it rest while you plate up the remaining parts of the meal. I also pour over the remaining butter and herbs here.
