This Pear Recipe is Crave-Worthy 🀀
And smells amazing πŸ™Œ
1/Pears are aromatic, sweet and a classic Fall/Winter Fruit
But what about pickled pears?
The perfect blend of sweet and sour, amped up with warming spices.
These pickled spiced pears are perfect paired with:
Cheese
Charcuterie
Roast duck
Pork loin
Chicken
Turkey
/2 Also, consider making smaller jars and giving them away as holiday gifts for special friends.
This is a classic preserve that is jarred and then settles for ~4 weeks in your pantry.
The process is simple, so lets go through it
/3 Pears 🍐
Since we are jarring these up, you want small, firm pears. If you use soft or mushy pears they will fall apart when pickling them.
Finding the smallest pears possible will make jarring easier.
Bosc, Conference or Anjou are all good varieties to use.
/4 RECIPE
4.4lbs (2kg) small, firm pears
700g light brown sugar
550ml white wine vin
550ml cider vin
3in cinnamon stick, lightly crushed
1 lemon, sliced paper thin
1 tsp whole clove
2 tsp juniper berry
1 tsp allspice
1/2 tsp black peppercorn
1/2 tsp white pcorn
2 tsp sea salt
/5 METHOD
1.Add ingredients, except pears, into large saucepot & heat over medium; stir occasionally to dissolve the sugar.
2.Meanwhile, with a sharp peeler, peel the pears 1 by 1. Leave the stem & base intact, just remove the surrounding peels.
3.Add to pot 1 by 1,as you peel
/6 4.Bring the liquid to a simmer and cook the pears until translucent and just tender, when tested w/skewer or cake tester
5.This could take from 20-45mins depending on the pears and size. Start checking after 20 mins.
6.(Have another pot heating water for canning)

7.Turn the pears occasionally to ensure even cooking.
8.Your kitchen should be smelling amazing now.
9.When ready, remove the pears w/slotted spoon into (2) Qt sized canning jars.
10.*Make sure your jars are sanitized and ready.

11.Bring the liquid up to a boil and reduce for 5-10mins.
12.Using a funnel, evenly distribute the lemon peel and spices between the jars.
13.Add the hot pickling liquid to both jars, leaving 1/2-1in of headspace.
14.Lid and seal the tops of the jars.

15.Immediately boil the hot-packed jars for 7-8 mins.
16.Remove from the water bath and allow to cool to room temperature.
17.Tighten the lids, wipe jars dry, label and store.
18.The pickles need to mature for about 4 weeks for best result.
