Throughout history, organ meats were a prized possession due to their high nutritional value.
When Dr. Weston Price traveled the world and studied traditional diets from different cultures, he found that organ meats were always highly sought after.

There are countless examples of our ancestors and different tribes consuming animal organs, many times raw right after the hunt.
Our fellow mammals also instinctively go right after the organs. Wolves will almost always eat the organ meats of their prey before all else. Lions will also feast on organs, many times leaving the muscle meat for scavengers.
There is good reason for this.
In todayโs day and age, the term โsuperfoodโ gets thrown around far too often. If there ever is a good time to use the word, talking about organ meats is one of them.

This is because organs are some of the most nutrient dense foods in the world, if not the most. They contain highly bioavailable vitamins, minerals, fats, amino acids and even bioactive compounds.
In the modern American diet, we have gone very far away from this.
In the modern American diet, we have gone very far away from this.
In fact, organ meats are more economically valuable as either dog food or to export to other countries, which is sad.
Most Americans eat mostly muscle meat from supermarkets, which is lacking vital nutrients to say the least. Not only does the muscle meat contain far less nutrients, most of this meat comes from factory farmed animals which is even less nutritious.
This is one of many reasons why Americans are deficient in so many nutrients.
There is also no greater way to pay respect to the animalโs life than to consume the whole animal.

Our ancestors would not let an ounce of the animal go to waste. They would consume all the meat & organs, use bones for broth, and the hide for clothing and more.
Many times in America we will eat a certain cut of meat, and a lot of the animal will go to waste. This is a shame.

Today, beef organs are the most nutritious out of the conventional farm animals.
Iโm sure many of you have seen talk about beef liver recently, and for good reason. Beef liver is a true superfood. It is natureโs greatest source of Vitamin A, containing 100% of the recommended daily value in just 1oz.
Liver also contains great amounts of Vitamin B12, B1, B2, B6, K, E, D, folate, copper, iron, phosphorus, potassium, magnesium, manganese, and choline.
If you are new to cooking liver, here is a recipe:
If you would like to consume it raw, a great way to disguise it is by making smoothies:
If the thought of it still grosses you out, a great way to disguise it is to mix it with ground beef:
Another great organ to consume is heart. Since heart is technically a muscle, it has a much more familiar texture.
Heart contains cooper, selenium, iron, vitamin B12, folic acid, phosphorus, zinc and even collagen.

Heart is also the best food source for CoQ10, which is a compound that helps generate energy in your cells and helps prevent oxidative stress.
Since heart has a texture more similar to muscle meat, it is a great introduction to organs. A lot of people enjoy slow cooking or braising beef heart.
Some of the less popular organs that are also nutritious are kidney, pancreas and tripe.
Kidney is rich in Vitamin A, D, B12, niacin, selenium, iron, zinc, copper, potassium and phosphorus.

A great way to consume these organs if you do not like the taste is to blend them and mix them with ground beef, then season heavily. Organ taco meat or chili is a great way to start.
Another benefit of organ meats are that they are typically a lot cheaper than typical meat

It is very important to eat organs from healthy animals. Ideally youโd want to eat organs from 100% grass fed cows because they have the healthiest organs.
Iโd stay away from eating organs from factory farmed animals.

If you just canโt stomach the taste, freeze dried capsules are a good alternative, but Iโd definitely recommend eating fresh organs if possible.
Overall, organs are some of the most nutrient dense foods on the planet. They have been a prized possession by both our ancestors and other mammals for good reason. They cheaper than typical meat, and can be quite delicious if cooked properly. It is also extremely sustainable
