For the shrimp, simply cook on a pan for a few minutes with some seasonings, I used salt, pepper, paprika and garlic powder
For the sauce, combine avocado mayo with sriracha (make it as spicy as you want) and a drop of sesame oil
When the shrimp is done, toss it in the sauce

Assemble with the rice on the bottom, avocado, shrimp, sesame seeds and a jalapeño on top!
You could also totally do this with raw tuna or salmon if you wanted
