Dinner tonight is spicy shrimp on crispy rice
Here’s how I made it👇🏼
Start with making rice the day before, and shaping it into a rectangle
I made the mistake of using basmati rice so it didn’t stick very well, but if you use sushi rice it should be fine
Cut the rice into squares, then fry in avocado oil for 2-3 minutes per side, or until crispy
For the shrimp, simply cook on a pan for a few minutes with some seasonings, I used salt, pepper, paprika and garlic powder
For the sauce, combine avocado mayo with sriracha (make it as spicy as you want) and a drop of sesame oil
When the shrimp is done, toss it in the sauce
Assemble with the rice on the bottom, avocado, shrimp, sesame seeds and a jalapeño on top!
You could also totally do this with raw tuna or salmon if you wanted
