Start by making a simple chimichurri:
-1/2 cup extra virgin olive oil
-2 tbsp white wine vinegar
-About 3/4 cup fresh parsley
-4 Garlic cloves
-2 tsp dried oregano
-1/2 tsp salt
-1/2 tsp crushed red pepper

Season the lobster with salt and pepper, then coat with your chimichurri
You can totally do this with a garlic & herb butter as well

On a hot grill, place the lobster meat side down over direct heat, and cook for about 4 minutes
Make sure you spray the grates so it doesn’t stick
After 4 minutes, flip the lobster tails, and baste with more chimichurri

Cook on this side (meat side up) until the lobster reaches about 135 degrees internally
This is an absolute TREAT and you can make this for a fraction of the price of what you’d pay at a restaurant
